This is our own recipe. Kumquats, tamarind pulp, ginger, coriander and vodka. We’re letting this sit about 10 days before straining. I’m crossing my fingers that there’s not too much ginger. The tamarind pods that we peeled ourselves are in here. They’re the most disgusting looking thing in the jar. But they should impart a sour flavor to compliment the sweet kumquat and sharp ginger. We wish ourselves luck.
